We believe in making good food simply and  we like to let the flavours of the ingredients speak for themselves.  All our preserves are hand-made in small batches.

Located in the far North Shetland is closer to the Arctic Circle than to London and our kitchen window looks south over Hillwell Loch towards Fair Isle.  It is impossible not to be impressed by the different migrating birds on the loch which marks the changing of the seasons.

Similarly the force of nature—whether it be the strength of the wind, or the sight of waves crashing on the rocks—is always apparent.

It is the combination of these things that helps to provide the perfect environment for our food products.
